We put 500 gr. of our pasta in 1700 lt. of boiling water (or liquor of cooked meat) and then let them boil for 1-1.5 minutes. Afterward, we take the pot out of the heat, remove the water and pour into the pasta 100 gr. of olive oil (or fresh butter); we let them absorb liquids for 2-3 minutes.
Our pasta could be served with any sauce of our preference and some extra grated dry Anthotyros cheese (or Kefalotyri cheese).With this pasta, we can try a traditional recipe, which is mainly served in weddings in East Crete. All we need to do is to boil our pasta in the liquor of meat and serve it with some Cretan Antotyros cheese.
If we want to give a sea aroma to our meal we can add some seafood (squid, cuttlefish, shrimp, lobster etc.) into our boiled pasta and accompany this dish with some fine tsipouro.
To satisfy everyone the best choice we have is to serve this pasta with tomato sauce along with meat or meatballs.
Or we can make a roll with apaki, graviera cheese and vegetables for something more special.
For a twist, we could make a sweet recipe, by putting honey and nuts into your boiled pasta (check for a relevant recipe).
